StabMayo

Stabilizers for mayonnaise and sauces

Stabmayo is a series of combined stabilizers for mayonnaise, emulsion sauces, toppings, dressings, etc. They are an unique combination of specifically chosen emulsifiers, thickening agents and hydro colloids.
Stabmayo perfectly emulsify, thicken and simultaneously stabilize the final product, thus preventing the oxidation and prolonging its durability.
Dosage: 3-6% depending on the content of fats and dry substance.
Usage: Initially mix with the rest of the dry substances whereupon add to the oil phase.
Content: Modified food starch refined from waxy maize Е1422, Guar Gum Е412, Xanthan Gum Е415, Glucose powder syrup, etc.
Basic parameters:
Appearance: White to creamy powder;
Taste: Neutral;
Humidity: (2 hours 105°С) ≤15%
рН: (0,2% solution) 6.0±0.5
Microbiological content:
Total quantity: <1000/g
Moulds and yeasts: <500/g
E. Coli: not found in 1 g
Salmonella: not found in 25 g
Storage: The product is packed in plastic bags and boxes of 25 kg. Suitable for usage – 24 months in unopened packings, stored at dry, airy and dark place at temperature 4÷18°С and humidity up to 65%.
